MEET CHEF CASTRO

If genies existed in real life, we’d be suspicious that Chef Castro was one. “Ask and you shall receive” doesn’t quite do him justice—his ability to instantly turn pure imagination into plates of delicious reality is a rare and awe-inspiring gift.

Beyond his culinary mastery, Chef Joseph is a true artist at heart—a creator, a fixer of all things, a father, a friend, a son… and yes, even an amazing singer! Guests dining with us Thursday through Saturday will catch him crooning Sinatra-style alongside our resident performer as the night winds down!

Chef Castro’s culinary journey began in the Philippines, where he was raised in a family of chefs—proving the apple didn’t fall far from the tree. From those early kitchen days to formal training in both the Philippines and Italy, he developed a signature style that marries experimental excitement with soulful technique—blending innovation with deep-rooted tradition.

Today, as Executive Chef of Pink Tiger, Castro brings a lighthearted and focused approach to the menu—fusing Asian comfort food with Southern American flair, layered with MediterrASIAN finesse.

And if you catch a whisper of Italy in his dishes? That’s no accident—his first culinary love was Italian cuisine, and his early training still shines through in subtle ways.
